How to get a table at a three-star restaurant

The most famous restaurants in Europe release their tables weeks ahead and fill them within hours. A few habits make all the difference.

Know when the book opens

Most three-star restaurants open reservations on a fixed day, one to three months ahead. Find the rule on the restaurant's own website, set a reminder and book in the first minutes. Some release a whole month or a whole season at once.

Ask for lunch

Lunch is easier to book, often a little shorter and sometimes less expensive, with the same kitchen and the same service. For many of the great dining rooms it is also the better light.

Use the concierge

A palace-hotel concierge can sometimes find a table the website cannot. Ask when you book your room, not on the day.

Join the waiting list

Cancellations are common, especially for parties of two. Put your name down and keep your phone on the day before.

Be a good guest

  • Tell the restaurant about allergies and dietary needs when you book, not at the table.
  • Arrive on time. A tasting menu is timed for the whole room.
  • Dress the room. In palace dining rooms a jacket is expected.
